Breakfast & Brunches ― Muesli Smoothies

Serves: 2

Cooking time: 0 minutes

Ingredients :
  1. 50 grams / 2 oz / 1/4 cup ready-to-eat dried apricots
  2. 1 piece preserved stem ginger, plus 30 ml / 2 tbsp syrup from the ginger jar.
  3. 40 gm / 1-1/2 oz / scant 1/2 cup natural muesli (granola)
  4. About 200ml / 7fl-oz / scant 1 cup semi-skimmed (low fat) milk
Method :
  1. Chop the dried apricots into slices or chunks. Chop the preserved ginger.
  2. Put the apricots and ginger in a blender or food processor and add the syrup from the ginger jar with the muesli and milk.
  3. Process until smooth, adding more milk if necessary, to make a creamy drink. Serve in wide glasses.
Cook's tip : If serving it as a dessert , partner it with poached apricots.
