Ingredients :
- 50 grams / 2 oz / 1/4 cup ready-to-eat dried apricots
- 1 piece preserved stem ginger, plus 30 ml / 2 tbsp syrup from the ginger jar.
- 40 gm / 1-1/2 oz / scant 1/2 cup natural muesli (granola)
- About 200ml / 7fl-oz / scant 1 cup semi-skimmed (low fat) milk
Method :
- Chop the dried apricots into slices or chunks. Chop the preserved ginger.
- Put the apricots and ginger in a blender or food processor and add the syrup from the ginger jar with the muesli and milk.
- Process until smooth, adding more milk if necessary, to make a creamy drink. Serve in wide glasses.
Cook's tip : If serving it as a dessert , partner it with poached apricots.
